Measure, Mix, and Bake Cornmeal Muffins
Makes 12 (2 oz.) medium muffins
(Super with dinner or lunch salads and soups)
Ingredients:
2 cups self-rising cornmeal mix*
1 egg, beaten
1¼ cups milk, skim
¼ cup vegetable oil
Directions:
1. Preheat the oven to 450°F.
2. Grease the bottoms of 12 medium muffin cups.
3. Place cornmeal mix in a medium-sized mixing bowl. Make a dip or "well" in the center and put the other ingredients in it. Stir just until the dry ingredients are moistened.
4. Spoon the batter into the greased muffin cups, filling about 2/3 full.
5. Bake for 20 to 25 minutes or until golden brown. Cool the pan about 3 to 5 minutes and remove the muffins.
6. Serve warm with honey.
* If substitution is needed: mix together 1½ cups cornmeal, ½ cup all-purpose flour, 1 tablespoon baking powder, and 1 teaspoon salt.
* Whole-grain version: make substitution using whole-grain cornmeal and whole-wheat flour.
