Measure, Mix, and Bake Double Chocolate Brownies
Makes 2 dozen brownies
Ingredients:
¾ cup butter or margarine
2 cups granulated sugar
½ cup cocoa powder
2 teaspoons vanilla
4 eggs
1½ cups self-rising flour*
¼ teaspoon salt
½ teaspoon baking powder
2 cups chocolate chips
½ cup chopped nuts
* If substitution is needed: mix together with a wire whisk, 1½ cups all-purpose flour (or part whole-wheat flour), 2¼ teaspoons baking powder, and ½ teaspoon salt. Also, add additional baking powder and salt listed.
Directions:
1. Preheat the oven to 350°F. Lightly grease or spray a 13- x 9-inch pan.
2. In a microwave mixing bowl, microwave the butter or margarine until melted.
3. Using a spoon, stir in the sugar, cocoa powder, vanilla, and eggs until smooth.
4. Add the self-rising flour (or substitute), salt, and baking powder. Stir just until the flour is wet.
5. Stir in the chocolate chips and chopped nuts just until blended.
6. Pour the batter into the pan and bake for 30 to 35 minutes.
7. Cool on a cooling rack 10 minutes before cutting into 2-inch squares.
