Measure, Mix, and Bake Mini-Muffins
Makes about 12 mini muffins
(A snack-sized or party treat)
Ingredients:
¾ cup self-rising flour*
¼ cup granulated sugar
1 egg, beaten
¼ cup 2% milk
2 tablespoons vegetable oil
1/3 cup mini chocolate chips
Directions:
1. Preheat oven 400°F.
2. Prepare mini-muffin pans by greasing bottom of muffin cups or lining with paper liners.
3. Place measured flour in a mixing bowl. Make a "well" in the middle of it and place the other ingredients into it. Stir the mixture just until all the dry ingredients are moistened.
4. Bake for 15 to 18 minutes. Remove from oven to a cooling rack. Cool about 3 to 5 minutes; remove muffins. Serve warm.
* If substitution is needed: mix together ¾ cup all-purpose flour (may be part whole-wheat), 1 teaspoon baking powder, and ¼ teaspoon salt.
