Measure, Mix, and Bake White Cupcakes
Makes about 15 cupcakes
Ingredients:
Cupcake paper liners
¼ cup butter, room temperature (not melting)
2 cups self-rising flour*
1 cup granulated sugar
¾ cup 2% milk
3 eggs
1 teaspoon vanilla
Directions:
1. Preheat the oven to 375°F.
2. Line medium-sized muffin cup pans with paper liners.
3. Place all the ingredients in a large bowl. Beat at low speed until well-mixed, scraping the bowl often. Beat at medium speed for 5 minutes.
4. Spoon batter into paper-lined muffin pans, filling each about half full.
5. Bake at 375°F for 15 minutes or until done (when center cupcake in the pan tests done with a toothpick). Remove pan from oven to cooling rack.
* If substitution is needed: use a wire whisk and mix together 2 cups bleached all-purpose flour or 2¼ cups cake flour, 1 tablespoon baking powder, and 1 teaspoon salt.
