Instructions

1. Preheat oven to 350°, grease and line a loaf pan with parchment paper, set aside.
2. Place the orange zest and water in a saucepan and simmer over low heat for about 30 minutes or until the peel is tender.
3. Pour off all but ¼ cup of water and add the honey to the orange liquid and peel. Boil the mixture over low heat for about 15 minutes. Cool slightly. The syrup should thicken.
4. Sift flour, baking powder, and salt into a medium mixing bowl. Set aside.
5. In a separate bowl, combine the milk with the orange syrup. Add slowly to the flour mixture. Mix until well combined. Fold in nuts just until combined.
6. Pour batter into prepared loaf pan.
7. Bake for 45 minutes or until lightly browned and firm at the center.
8. Remove and allow to cool slightly before removing to cooling rack.
