Peanut Butter Bulgur Cookies

Makes 4 dozen cookies

Ingredients
  • 2/3 cup shortening 1 cup brown sugar 1 cup white sugar 2 eggs 1 tsp. soda 1 Tbsp. hot water 1 cup peanut butter ¼ tsp. salt 1 tsp. vanilla 1 cup constituted bulgur
  • 2 cups flour

Preparation Cream together shortening and sugars. Add eggs, beat well. Dissolve soda in water. Add dissolved soda, peanut butter, salt, and vanilla to sugar mixture; mix well. Add reconstituted bulgur and flour, mix well. Roll in balls, press with fork. Bake at 325°F for 15 to 20 minutes. Provided by American White Wheat Producers Association.
