Honey Lemon Cookies
Ingredients
- 2 pkg. "JIFFY" Honey Corn Muffin Mix
- 1/2 cup (1 stick) butter, softened
- 4 oz cream cheese, softened
- 1/2 cup brown sugar, firmly packed
- 2 eggs
- 1 cup flour
- Zest of 1 lemon
- Frosting:
- 1-1/2 cups powdered sugar
- juice of 1 lemon
Instructions
- Preheat oven to 350°F. Grease baking sheets or line with parchment paper.
- For cookies, cream butter, cream cheese and brown sugar until light and fluffy. Add eggs; beat on medium for 1 minute.
- In separate bowl, combine remaining ingredients. Add to cream cheese mixture until just combined.
- Drop by tablespoon onto baking sheets. Bake 12 - 15 minutes or until edges are slightly browned. Cool
- Optional For frosting (optional), combine ingredients. Spread onto cookies.
