Mother’s Day is a meaningful time to show appreciation — and what better way to say “I love you” than with something homemade from the heart (and the oven)? Whether it’s for a mom, grandma, guardian, or a special role model, baking a simple treat is a thoughtful gift that shows care, creativity, and kitchen confidence.

As educators, this is a great opportunity to encourage your students to practice basic baking skills, while also exploring the joy of giving. Below is an easy, crowd-pleasing recipe to share in your classroom or as a take-home project. It’s perfect for younger bakers to make with a little supervision or even surprise someone special all on their own.


Recipe Spotlight: Mini Strawberry Shortcake Biscuit Jars

These adorable treats layer sweet biscuits, whipped cream, and juicy strawberries into single-serve mason jars — perfect for gifting! They’re easy to make, fun to assemble, and absolutely delicious.

Ingredients (Makes 6 Jars)

For the Biscuits:

2 cups all-purpose flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tbsp sugar

½ cup (1 stick) unsalted
butter, cold and cut into cubes

¾ cup buttermilk (or milk
with 1 tsp lemon juice)

For the Filling:

1 pint fresh strawberries,
hulled and sliced

1 tbsp sugar

1 cup heavy whipping cream

2 tbsp powdered sugar

½ tsp vanilla extract

Optional: 6 half-pint (8 oz)
mason jars or reusable cups

Instructions

Prep the Strawberries:

Make the Biscuits:

Preheat oven to 425°F (220°C).

In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

Add cold butter and use a pastry blender or clean hands to mix until crumbly.

Stir in buttermilk until just combined.

Drop spoonfuls of dough onto a baking sheet and bake 10–12 minutes, or until golden. Let cool completely.

Whip the Cream:

In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Store in the fridge until ready to assemble.

 

Assemble the Jars:

Break each biscuit into a few pieces.

In each jar, layer biscuit pieces, strawberries, and whipped cream. Repeat layers as desired.

Seal the jars and store in the fridge until ready to gift (best eaten within 24 hours).

Decorate the Jars: Let students add ribbon, tags, or handwritten notes to personalize their gift.

Math in the Kitchen: Have students scale the recipe up or down for practice with fractions.
