This bread is hearty with just a touch of sweetness from the honey and texture from the oats, perfect for sandwiches.

Ingredients

  • 3 cups unbleached all-purpose flour
  • 2 packages Active Dry Yeast
  • 1 1/2 teaspoons salt
  • 1 cup water
  • 1 cup cottage cheese
  • 4 tablespoons margarine
  • 1/2 cup honey
  • 2 eggs, room temperature
  • 2 1/2 cup whole wheat flour
  • 1/2 cup old fashioned rolled oats

Instructions

  1. ​In a large bowl, combine 2 cups white flour with yeast and salt.
  2. Heat water, cottage cheese, margarine, and honey to 120*.
  3. Add warm liquid and eggs to flour mixture. Mix well.
  4. Add whole wheat flour and oats.
  5. Stir in remaining white flour, adding more if necessary. Knead until smooth and elastic.
  6. Place in greased bowl, cover, and let rise until doubled.
  7. Punch down, shape loaves, and place in 2 greased 9 x 5 x 3- inch pans.
  8. Cover and let rise until doubled.
  9. Pre-heat oven 350*
  10. Bake at 350 degrees F for 35-40 minutes. Remove from pans onto cooling rack.
