Ingredients
- Bondies batter:
- 1 cup salted butter
- 2 cups packed brown sugar
- 2 cups all purpose flour
- 1 tablespoon of vanilla
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs + 1 egg yolk
- Cinnamon topping:
- 1/2 cup granulated sugar
- 2 1/2 tablespoons of cinnamon
- Drizzle Icing:
- 2 tablespoons cream cheese
- 1 tablespoon heavy cream
- 1 cup powdered sugar
- 1 1/2 teaspoon vanilla
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350*
- Line 8x8 pan with parchment paper
- Melt 1 cup butter for blondies and cool to room temperature.
- Using a large mixing bowl add brown sugar and butter, whisk until combined.
- Add eggs and vanilla extract, mix well.
- In separate large mixing bowl sift flour, baking powder, cinnamon and salt together.
- Mix wet ingredients into dry ingredients, do not overtax, a few stirs to incorporate.
- Pour batter in prepared pan.
- Cinnamon topping:
- Combine cinnamon and sugar, spoon over blondie batter before putting in the oven. Using a butter knife, swirl the top into the batter.
- Bake for 35-40 minutes until edges are golden brown and center is soft but set.Do not over bake, start checking at 30 minutes.
- Remove from oven and cool completely.
- Drizzle Icing:
- Using a small sauce pan, combine the cream cheese, heavy cream, vanilla, salt and powdered sugar. Whisking constantly over low heat until all ingredients are melted completely and combined. Remove from heat and allow to cool for ten minutes.
- Drizzle over blondies in pan, cut into squares and enjoy!
