Instructions

1. Pre-heat oven 350*, grease and flour 3 9″ cake pans, set aside.
2. Cake:
3. In a stand-up mixer, cream butter and shortening. Gradually add sugar, beating until light and fluffy and sugar is dissolved.
4. Add egg yolks and beat well.
5. in a small separate bowl combine buttermilk and soda; stir until baking soda is dissolved.
6. Add flour to creamed mixture alternately with buttermilk mixture, beginning and ending with flour.
7. Add vanilla, Black Walnuts, and coconut; stir thoroughly.
8. Beat egg whites, at room temperature, with cream of tartar, until stiff peaks form, then fold into batter.
9. Pour batter into prepared cake pans. Bake at 350°F for 30 minutes or until cake tests done. Cool in pans for 10 minutes, then remove from pans and finish cooling.
10. Frosting:
11. Cream the cream cheese, butter, and vanilla until smooth.
12. Slowly add powdered sugar, fold in Black Walnuts.
13. When cake layers are completely cooled, frost cake and serve.
