Ingredients
- Cupcakes:
- 1 1/2 cup All-Purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1/2 cup granulated white sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup whole milk
- Frosting:
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1/4 teaspoon salt
- 2/3 cup dulce de leche*
- 2-4 tablespoons heavy cream or milk
- Drizzle:
- 1/4 cup dulce de leche*
- 1-2 teaspoon of milk
- *Dulce de leche can be found in the latino section of your grocery store. If unable to find you can substitute caramel ice cream topping
Instructions
- Pre-heat oven to 350* Line cupcake tins with paper liners or butter and flour cupcake tins ( shaking excess flour)
- In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.
- In the large bowl, beat together the butter, brown sugar and white sugar until light and fluffy.
- Beat in eggs and vanilla.
- Add the dry ingredients to the wet, stirring just until combined. Stir in the milk, do not over beat.
- Pour batter into cupcake tim 1/2 full.
- Bake at 350 for 20-22 minutes or until they spring back when lightly touched. Remove from pan and allow to cool completely on a wire rack.
- Frosting: Beat the butter until fluffy, add the powdered sugar, salt and dulce de leche, beating until smooth. Add enough of the cream or milk to make a smooth consistency.
- Frost cupcakes
- combine 1/4 dulce de leche with milk and lightly warm to a drizzle consistency, do not overheat.
- Drizzle over cupcakes, serve.
